Interested in: i) microbial interactions for the development of natural antimicrobials; ii) Wine yeast response to fermentative stress; iii) Interactions between yeast and pathogenic fungi; iv) Interaction between Saccharomyces cerevisiae and non Saccharomyces yeasts in wine and beer; v) Biotechnological production of carotenoids with red yeasts.
